Food log from 7/26/2011

Here is another day of food logging.  This was on Tuesday, which is a day that I am at home and not working.  You will see how it differs from last week's log when I was in the office. 

Breakfast
Tropical smoothie
1 small peach
1/2 frozen sliced banana
3/4 cup almond milk
1 T rolled oats
1/2 T coconut oil

Half caff coffee with almond milk


After a little play time, we headed out for a run to the park (5.36 miles total).  I was famished after my run (not usual), so I grabbed a snack to tied me over until lunch.

I am not a huge fan of fake meat, but it has been really difficult getting meals on the table these past few weeks.  The little guy is not sleeping well (advice?) and I am exhausted as well as not getting enough protein in my diet, so I had about 3 oz. of veg Italian sausage, the hubs had pork sausage meatballs.  This particular brand is very lean and tasty.  I had had in the freezer forever, so I needed to use it anyway.

Snack

I ran so I get ice cream.  Yeah!!!  It is one of my 2 vices.  Unfortunately, I was hungry all day long but we were so busy that I didn't get a chance to eat enough.  Since coming back to my pre-pregnancy weight, I don't need to be cutting calories anymore, and I am running more, so I actually need more calories.  When I plugged this into Sparkpeople, I was only to 1700+ calories.  That is not enough if I am running and nursing. 

And I was still hungry to after the kids were in bed, I ate a small bowl of dry cereal (Kix) and a handful of Kashi crackers dipped in cottage cheese (not pictured).  That got me very close to 2,000 calories so I called it a day.  I didn't want to eat too much since it was so late.  If I am too full at bedtime, I don't sleep well.

I know I need to get my protein up.  Any advice?  I think I will have to start incorporting more cottage cheese into my diet to help me.

Eating at work (Food log)

So it's been a while since I have shown you what it is that I am eating during the day.  This is a typical day when I have to go into the office (right now that is only one day a week). 

Breakfast
Here is my Green monster smoothie (coconut milk, frozen banana, almond butter, ground flaxseed, and kale) and my morning coffee (half-caf) with coconut milk in it.

Morning snack
A nectarine I took to a meeting.  I love summer fruits!!!

Lunch
The start of my water drinking for the day.  I aim to drink 3 of these bottles everyday.  For lunch, I had leftovers - bbq tempeh with green peppers and onions and quinoa.


And some watermelon for dessert.  Told you I like summer fruits.

Afternoon snack

Heaping 1/4 cup mixed nuts (roasted salted almonds and walnuts) with a couple of tablespoons of dried cranberries (raspberry flavored)

Dinner



Dinner on Wednesdays tends to be more leftover stuff in the fridge because I don't have much time to cook when I get home with 2 small children and a hubby that works until 8:30pm most nights.  So I had bought a zucchini, sun-dried tomato and feta quiche at the farmer's market on Tuesday (it was 1/2 off, so it was a steal of deal) that they make fresh there and use cage free eggs and organic dairy.  I had some of that along with some broccoli that I dipped in hummus.  And then we had leftover hashbrown casserole from a brunch so I had a few bites of that while I was getting hubby's dinner.

I didn't get my run in that day so my rule is no run, no dessert (that rarely works for me but that day it did).  :)  My totals for the day:

Calories:  1,712
Percent breakdown:  44% fat, 42% carbs, 14% protein

I am a little surprised that my fat was as high as it was.  I have been trying to eat more protein, but I have found it difficult, especially when I limit dairy and eat a veg diet.  I aim for 15% but I don't track my calories much anymore so I don't know how far off I am on a typical day. 

Any advice on other protein sources?  I don't tempeh or tofu more than once a week usually, so I need some other choices.

National Clean Eating Day - Recap

So it was on Wednesday that I decided to participate in the National Clean Eating Day, and I was going to take it seriously.  That meant do processed food period!  Which meant no cereal, no breads (except for sprouted breads), nothing.  Well I wasn't completely equipped for the day, so that hurt.  But the day started off with breakfast.

Organic rolled oats, organic blueberries, toasted walnuts, and a little bit of ground flaxseed.  I also decaf coffee with some 1% milk in it.


Being pregnant, I usually can't go 3 hours without eating, and I tend to snack a lot, so I had a pear to tide me over until lunch.


For lunch I had some leftover Greek Couscous with Shrimp (I am trying not to eat seafood, but I had been craving shrimp for weeks).  Such a good and easy recipe

After Hope when down for nap, I got hungry again, so I made some sprouted bread toast and put a little natural almond butter on it.  Yummy!!!

Hope took an extremely long nap, when she finally did wake up, I decided to have a little organic plain lowfat yogurt and extend dinner a little longer.  

Hope and I had to run some errands and then when we got back, we decided to play outside instead of starting dinner right away.  It was 6:25 and the husband called to say he was on his way home.  ***Note:  This NEVER happens.***  Since I hadn't started dinner (spinach and tomato frittata and salads) and the weather was so nice that day, we decided to walk to dinner and go out.  Well needless to say, we ended up at a pizza place, so I can easily assume my crust was not clean, and my sauce may or may not have been. 

I also forgot my camera so I couldn't even take a picture of it for you.  But I had a salad (no croutons) with vinegarette dressing and one slice of veggie pizza.  So I had a lot of veggies but not entirely clean.  But we did walk to dinner and back (1.7 miles each way) so I did get some extra exercise in and it was so nice to eat out.  We hardly ever get to with Hope not being very good at dinner right now.

Surviving the stomach bug, another day's meals

So Sunday night and Monday I was home sick with the stomach bug. It was awful but luckily this morning I am feeling better. So this week will probably lack some good exercise and good eats posts, so here is an eating blog I forgot to post from last Thursday. I am going to continue with my G2 Gatorade and toast for now.

2 eggs over easy, a plain piece of toast and some coffee with skim milk

I wasn't terribly hungry at lunch time, so I just had some vanilla yogurt (fat free) with some mango added to it. I also was drinking my water by now.

Later in the afternoon, I made a veggie quessidilla. Here it is right before I placed it into the pan.


And here it is on my plate. I put 2% mexican blend cheese, yellow bell pepper, tomato, and onions. Yum!

And of course, my typical hold me over till dinner, some candy. Thank goodness all the candy is gone!

Dinner for me was a veggie burger with cheddar cheese, roasted broccoli, and some homemade sweet potato fries. Yes, my veggie burger is on a whole wheat hot dog bun; we were out of regular buns.

BTW, it's snowing again here. That makes for 3 times this winter. Has to be a record!

Eating and Exercise - 2/17

So most of my eating logs are on days when I am either not working or working from home, so I have access to my kitchen all day. So I thought I would give you an idea of what my eating looks like on a day when I do work.

I started the day with some nonfat plain greek yogurt and mixed in some mango and some frozen raspberries along with a tablespoon or 2 of slivered almonds. And of course my travel mug of coffee with skim milk.


I had a doctor's appointment during lunch, so I had a midmorning snack - a granola bar and another mug of coffee.


My late lunch consisted of an ab&j (almond butter and jelly) on whole wheat bread and a pear.



I did have a bite of a king cake (not pictured), but it was only a bite, so I feel pretty about my restraint. And then I had planned on having a snack, but I knew it was getting late and I wasn't going to be able to get my run in (looking for a house is exhausting), so I didn't have my afternoon snack and just made dinner instead.
Dinner consisted of healthy crab cakes (broiled, not fried), spicy peanut noodles (yum) and "fried" zuchinni (baked not fried again).

I was very full and pretty upset about a house that I had found and then found it that it went under contract last evening. Too upset to eat ice cream, which I probably shouldn't have anyway, but I am still getting over that the first house I had found since we have been looking is off the market. I am still bumming around.

Eating and Exercising - 2/11

Well exercising today was rest. It's just too much for me to try to add in some exercise when I am working from home and watching Hope (with help of course). Tomorrow I plan to do a 5 mile tempo run and I have already made plans with a treadmill, because it's supposed to snow and I can't take Hope out in that.

So for breakfast, I started out with a grapefruit and a piece of whole wheat toast with some almond butter on it and my decaf coffee with skim milk. Gotta love the coffee.


For lunch, I finished off the refried beans with another bean burrito. Here is a picture of the burrito before I rolled it up (refried beans, cheddar cheese, and some chiptole sauce on a high fiber 7 inch tortilla).

All rolled up and heated with a side of my leftover shepherd's pie from the Vegetarian Times magazine (not my favorite thing in the world, but I don't want to waste food).


Dessert was some Valentine candy my mother-in-law gave me. I had to try all 3 kinds. And then I tried all 3 kinds again. :)

For a snack, I finished off the rest of the Goldfish graham crackers that Hope and I had been eating this week. I know it's not good to eat out of the bag, but there weren't too many left, so I figured I would just eat the rest.


Dinner was Mexican Casserole from the Cooking Light magazine (so yummy, btw) with a dollup of fat free greek yogurt and some corn. And again, this is on a salad plate so it looks more filling.

I guess it wasn't too filling because I was still pretty hungry after dinner, so I had to go ahead and make myself some ice cream. Hope and I shared some Breyer's Light Mint Chocolate Chip ice cream. Soooo good! My favorite. I am trying to not have dessert when I don't work out, but I was really hungry tonight. :)

Pretty good, dessert

I ate one small sugar cookie Friday night. Pretty good for me, because I am a huge dessert fan. Of course, Adam and I have gotten Hope's cold and feel pretty bad, so I didn't work out at all this weekend. :( I am hoping I will feel better on Monday so I can get an easy run in on the treadmill.

Eating and Exercising - 2/5/10

Another day and I decided to log my food for y'all again. Basically, I have gained a few pounds since I have stopped breastfeeding, and I want it off. And, I feel guilty that I haven't posted since Monday.

So this morning, Hope only ate about half her breakfast (oatmeal), so I ate some of hers (not pictured) then I ate a grapefruit sprinkled with a little bit of sugar.


And of course, my cup(s) of decaf coffee with skim milk. Yum! Best part of my morning.


For lunch, I made a bean burrito with refried beans, monterey cheese, and chiptole pepper. I put this burrito on a salad plate and my tortilla was a 7 inch, so I kept it small.



Couldn't decide what to eat after my burrito, so I had some honey greek yogurt and pretzels. It's a great way to end a meal with something sweet and it's high in protein too.

It rained all day and was very yucky outside (38 degrees and rain), so instead I did a 30-Day Shed of the the tv (Exercise TV from Comcast OnDemad) and I bought some Finger Paint and let her made Adam a birthday card.


I did not have an afternoon snack for 2 reasons. I had to make some pasta salad for Adam's tennis match tomorrow, so I did eat a little of it while I was making it (have to taste as I go because I don't measure things like this).


I also had a small bite of guyre cheese while I was making dinner.


Here is the salad I had for dinner. Now this is on dinner plate. I had planned on having both my salad and the rest on the same plate, but the casserole took a little longer to bake, so I ate my salad first. Mixed greens with green bell peppers, celery, and tomatoes with a light italian dressing.

My portion - one egg and maybe a little extra of the other stuff. It was ok. I think my portion had a lot of turnips in it and the flavor was a little strong for me. I had a little of Hope's and it was better. Not sure this recipe will be on my every week recipe list, but it was pretty good. If you like turnips, then you will love it I am sure.
Ok, so I was supposed run 5 miles today but it was just too yucky outside, there was no way. I didn't even want to go to the gym and run because I would have to take Hope outside and she is still battling a cold. Because of that, my goal is to not have dessert tonight (Adam's birthday is tomorrow and you won't believe the cake I bought for him). I will do a quick post tomorrow, to let you know if I was able to fight off dessert (if you know me, you know dessert is my weakness).

A day of eating, 1/21/10

A little late in getting this to you, but better late than never. Here was breakfast, oatmeal with skim milk, cranberries, and almond slivers. And of course my decaf coffee with skim milk. Hope had organic cheerios and whole milk.


Lunch was leftovers (for both Hope and me). I made Tuna Noodle Casserole from my Cooking Light magazine. It was pretty good. Hope loved it! She eat for 3 straight days. And this is on a salad plate.

Then when Hope went down for a nap I found this in our cabinet. I just couldn't resist. Yummy!


We ended up having an early dinner, so no real snack for me. Dinner started with a nice salad of mixed baby greens, grape tomatoes, cucumber, green bell peppers, goat cheese, and light italian dressing (Newman's Own Light).


Then I made "fried" fish (it was baked in the oven) and baked sweet potato fries. Again, on a salad plate.

Since dinner was early and I had no afternoon snack, I did end up having some Breyer's Light Ice cream. Ice cream is definitely my weakness. A friend of mine, was writing about how you pick and choose so much when it comes to food. How she drinks 64+ oz. of water everyday but also 20-30oz. of coffee too. Well for me, it's dessert. I can eat so healthy all day long, but I eat dessert more than I should. We always have ice cream in our house. It's a must!

A day of eating . . .

So I have noticed more of more health blogs have incorporated what they eat into some of their posts. I thought I would do the same for today. So for breakfast I ate 1 cup of Wheeties, skim milk and decaf coffee with skim milk for breakfast. Hope had organic Cheerios and whole milk.


Hope was napping during lunch, so I made myself a spinach salad with 1/2 apple, some tomatoes, orange bell peppers, lowfat no salted added cottage cheese, a little goat cheese, and Newman's Own Lite Italian dressing. I had already gotten out dough from the freezer so I knew we were having pizza for dinner. When I have pizza or pasta for dinner, I like to have a salad for lunch. It doesn't always work that way, or I forget, but when I remember I try to balance out my day.

After lunch, I was needing a sweet so I grabbed some leftover Christmas candy from inside the fridge (3 hershey kisses and 1 chocolate covered cherry).
After my dessert, Hope was up and I fed her (I ate a piece of her banana and a couple bites of her cream cheese and jelly sandwich which is not pictured). After that, we went for a 5.5 mile run and played at the park.

I had planned on making a veggie pizza, but then realized that we were missing spaghetti sauce, so I had to change my game plan. I had already cut my olives, so Hope and I ate them instead. I was starving after my run, but it was too late for a snack so I just started dinner early.

Hope and I both love broccoli and I have a great roasted broccoli recipe so I made that since I needed to get rid of the broccoli. Hope and I both ate this with a little leftover for Hope's lunch tomorrow. Yummy!

Here is my buffalo chick'n pizza. My half has morning star chick'n strips and Adam has rotisserie chicken. It turned out well. We got a pizza stone for Christmas and the pizza was good both times. Since I decided this morning to make pizza, I grabbed a frozen sourdough loaf from the freezer. I can't stand the Pillsbury pizza dough, so I usually make my own, but when I do, I do 1/2 whole wheat. We have had that for a while, so I bought a big bag of this frozen dough and Adam loves it.

This is my piece. FYI - it's on a salad plate, so it looks bigger than it is.

So I don't know what my calories are for the day, but I know it's not enough. I usually have an afternoon snack which I ran out of time today. Hope is transitioning to 1 nap a day which is really hard so I ran in the afternoon instead of the morning. So by the time I showered, it was 5:00pm and time to start dinner. I am sure I will have dessert tonight (maybe I will take a picture for you) :). Maybe some cheesecake from the bridesmaid luncheon that I some how got the extras of. Or it will be ice cream, but I am thinking cheesecake. Good night and hope you enjoyed a day in the life of my eating. :)
