Menu Planning - 1/3/11

Happy New Year everyone!!!  Well Adam has expressed the need to lose a few lbs (while I continue to gain, good luck hubby), so I thought I would start figuring out some meals for the week and why not post them as well.  This is what I am thinking for this week.


Monday - Wild rice pub burgers, homemade baked sweet potato fries, and roasted broccoli
Tuesday - Leftover butternut squash soup (from Vegetarian Times magazine), grilled cheese sandwiches
Wednesday - Cottage cheese and noodles (BTW, we have switched to using elbow macaroni)
Thursday - Trader Toe's simmer sauce with chicken and tofu (and veggies) with brown rice
Friday - Smoky Bean Burritos or homemade pizza

Menu Planning - 10/4

So I am finally getting back into menu planning after moving then being pregnant (first tri was  not about basic meals).  I had been inundated with awesome recipes from other blogs, my vegetarian times magazine, and my cooking light magazine.  I am so excited to hit the farmer's market tomorrow and buy up my ingredients.  Here is what I am thinking this week:

Monday - Spinach and Tomato Frittata and salads with all our leftover veggies (Frittata recipe came from my Shape Magazine, Sept. 2010)

Tuesday - Quinoa and Lentil Cutlets and some sort of veggie, can't decide yet.  I will be tweaking the cutlet recipe a little, not because I think it needs it, but to put ingredients into the recipe that I already have and not buying similar ingredients.  If I remember, I will take pics and post my recipe.

Wednesday - Crock pot lasagna, friends are coming over and will be providing the rest of the meal.

Thursday - Fall Vegetable Curry over brown rice, yum!  From my cooking light mag.

Friday - ???  Either leftovers, or maybe a homemade soup (I have recipes for a loaded potato soup as well as a Creamy Root Vegetable Stew).

So it looks like it's going to be a busy cooking week for me.  I can't wait!

Some Meal Planning

Well, since I am pregnant, sometimes I am in the mood for meals, and sometimes I am not, so I am not doing the traditional menu planning, but I will buy enough foods for 4 meals and then depending on my mood, I will make whatever I am thinking. Here are some of the meals I am hoping to make in the next week or so.


Moroccan Lentil Stew
(recipe from the October Vegetarian Times magazine, link not yet available)


Spaghetti Pie
(old recipe I have had for a while, if you are interested in the recipe, post a comment and I will post the recipe, fyi - it's a vegetarian recipe)




Spinach Tomato Frittata
(recipe from Shape, link not yet available)

P.S.  I already made the stew and it was pretty good.  I added a side salad with arugula, tomatoes, green peppers, and feta cheese and a slice of cibatta bread.  Yummy!!!

Menu Planning going on hiadus


Since we are moving in 3 1/2 weeks (eek, did I just type that), menus are going to be difficult. We are trying to go through what we have in the freezer and cupboard so meals are not going to be very exciting and will probably look pretty scary. So I am not going to be planning a lot of meals ahead of time and buying a lot of new ingredients. I will be using up what we have and just buying some fresh fruits and veggies to keep in the house. Hopefully, I can resume this part of my blog soon, but I will tell you about one meal we have utilized for the past 2 weeks - veggie nachos.




I wanted them last weekend after my race, so we stopped at the store after church and gathered up what we needed. Surpringly, we made them super fast and while they are not the healthiest thing you can eat, we made them using healthy alternatives. We used baked tortilla chip scoops instead of regular chips, drained and rinsed black beans instead of chicken or beef, and veggies to top it off (tomatoes, bell peppers, onions, and lettuce). We did use cheese (2 kinds actually), but it was still probably less cheese then if we had gotten it at a restaurant. They were so good last weekend, that Adam wanted them again. And it was very satisfying for the meating eating husband that we now have another vegetarian meal for us. :)

Menu Planning - 3/22

A little late, but I finally figured out the dinners for this week. I am getting into a rut because I am trying to minimize leftovers and buying too many ingredients since we are moving in just over one month (yikes, did I just say that). It's hard to plan menus when that happens. But here is what we are having this week for dinner.

Monday - Spaghetti with homemade marinara, salads
Tuesday - Burgers (veggie for me, beef for Adam), roasted broccoli
Wednesday - Breakfast for dinner, omelettes and french toasts
Thursday - Navy Bean-and-Artichoke Casserole with Goat Cheese (Vegetarian Cookbook)
Friday - Cottage cheese and noodles

Menu Planning - 3/15


Well it's post birthday for me, so time to get back on track. Of course my family gave me lots of candy and cake for my birthday so I will be going through that this week I guess. Here is what I am thinking for menus for this week.


Mon – ? I am thinking leftover veggie pizza and salad for me, don't know for Adam though
TuesTen Minute Tasty Asparagus and Brown Rice
Wed – Hoison glazed tempeh with green beans and cashews (VT, March issue)
Thurs – “Fried” fish, salad, potato fries
Fri – Homemade Pizza


I have the ING half marathon this week (Sunday). I can't wait!

Menu Planning - 3/8


Ok, so completely healed from the stomach bug and ready to start cooking again. Here is what I have on the menu this week.


Monday - A version of Runblondie's Bean Concoction, chicken for Adam and salads

Tuesday - Either on our own or crockpot meal

Wednesday - Breakfast for dinner - eggs and hashbrowns for sure

Thursday - Tacos

Friday - Cottage cheese and noodles


So not my most exciting meals of the week, but I am trying to use what we have in the fridge and pantry before we move. Have a great week everyone!

Menu Planning - 2/24


I know I am a little late this week, but here is what we are eating for dinner this week. It's not very inventive, but I am just too worn out from house selling and house buying.


Monday - Dinner out at my mom's favorite restaurant

Tuesday - Leftover from that yummy dinner

Wednesday - Big salads (use up all the veggies I have in the fridge and it's quick and easy)

Thursday - Basil Caesar Mahi Mahi (didn't make it last week)

Friday - Either pizza or breakfast for dinner (pancakes and eggs)

Menu Planning - 2/17


I know I am a little late in posting this, but better late than never. So I am feeling some seafood this week, so I bought some crab and mahi mahi fillet and can't wait to cook them both (separately). Last night, I ended up eating out with my MIL so I have had to change a little bit of what I was planning on making this week, but it works out fine.


Mon - Leftover tomato veggie soup, bread, chicken for Adam
Tues – Out to dinner with MIL

Wed – Healthy crab cakes, spicy peanut noodles, "fried" zuchinni

Thur – Basil caesar mahi mahi, apple salad, roasted broccoli

Fri – Vegetable korma (Feb. Vegetarian Times mag)

I wasn't feeling well yesterday so while I did figure out the meals for the week, I didn't get around to posting it. Here is what I am thinking this week.

Monday - Leftovers, soup (spicy sun-dried tomato and veggie soup) and cheese toast
Tuesday - Shepherd's pie (from Vegetarian Times magazine), salad
Wednesday - Cottage cheese and noodles, peas
Thursday - Mexican Casserole (from Cooking Light magazine), don't know what side yet
Friday - ?

Menu Planning - 2/1


Ok, so I have so many cookbooks and magazines right now about cooking, it's almost overload (almost). This week I am doing a combination of recipes from Cooking Light and Vegetarian Times. It's recipes from the most recent issues, so they are not online yet, but I am sure they will be. I will let you know where I am getting them from and if you wait a week or so, hopefully they will be online. Here is what I am thinking of this week.


Monday - Gnocchi
Tuesday - Spicy Moroccan stewed fish with couscous (Cooking Light)
Wednesday - Spicy sun-dried tomato soup with white beans and swiss chard (Vegetarian Times)
Thursday - Sicilian style roasted veggies in balsamic syrup (Vegetarian Times)
Friday - Rosti casserole with baked eggs (Cooking Light)

Menu Planning - 1/25/10


Wow, I have been so busy, I have barely had time to sit down and blog. I did do another day of eating which I will post tomorrow (hopefully). But now it's time to figure out what's for dinner this week. Here is what I am thinking:


Monday - Roasted broccoli, chicken, rice (I'll jazz up the rice some how, but not sure yet)
Tuesday - Honey-roasted acorn squash rings, sweet and sour cipollini onions, chicken cordon blue for Adam
Wednesday -Burgers, baked fries, salad or leftover sides
Thursday - Baked ziti, salad
Friday - ? Maybe leftovers


I am having trouble finding the links to some of my recipes. The acorn squash and the onions recipes are from the Cooking Light 2009 book and the baked ziti is from Self magazine. Have a good Monday!

Menu Planning - 1/11/10


Good morning everyone! Wow, what a weekend. My baby sister got married! I can't believe it! It was a great weekend, albeit a little cold, but we had a fabulous time! So now it's time to get back to reality, well at least a little. We still have lots of leftovers at our house so I know we are using them tonight. :)

Monday - Leftovers from the rehearsal dinner - Gnocchi, broccoli, and asparagus
Tuesday - Vegetarian quiche, broccoli
Wednesday - Tasty 10 minute asparagus and brown rice, chicken for Adam
Thursday - Enchilada Casserole
Friday - Haven't decided completely, maybe Potato Soup from my new vegetarian cookbook

Menu Planning - 1/4/10

Wow, 2010 already! The years are just flying by. I can't believe it! Well it's back to the menu planning for me, although this is an easy cooking week for me. My sister is turning 25 on Tuesday so we are eating out and she gets married on Saturday, so we have the rehearsal dinner on Friday. Kinda nice to start the year off easy as far as cooking goes.

Monday - Honey Parsnips, Baked potatoes, peas, chicken for Adam
Tuesday – Sister’s birthday, pizza and beer at her house while watching Georgia Tech in the Orange Bowl
Wednesday - Chili and cornbread
ThursdayChile- Baked Fish with Sweet Potatoes
Friday – Rehearsal dinner, Maggiano’s Little Italy

Menu Planning - 11/30


I can't believe it's the last day of November already! Wow, time is flying by. We had a great holiday weekend and got a lot of jobs done around the house. We are planning to put our house on the market at the beginning of the year, so we need to get it ready (clean out the clutter mostly). We plan to get our Christmas decorations out next weekend. It will be interesting to see how Hope does with the decorations. I might have to move things around this year so Hope doesn't get into things. :) Ok, so here is what I am planning for dinners this week.


Monday - Roasted broccoli, Turkey tetrazini (for Adam), and a loaded baked potato for me

Tuesday - Vegetable Curry with Lentils

Wednesday - Burgers, Parm Asparagus

Thursday - Cottage cheese and noodles

Friday - Roasted corn and garlic couscous, chicken (for Adam), salads

Menu Planning - 11/9

Sorry, I am a day late on this, but I just couldn't get around to posting this yesterday. Hope was up late last night and I was distracted most of the day. I am excited about this week's menus because I plan to try a lot of different recipes.

Monday - Cottage cheese and noodles

Tuesday - Stuffed peppers

Wednesday - "Chicken" and Veggie Pot Pie (I plan to use veggie chicken strips instead of real chicken), broccoli

Thursday - Mac and Cheese with Cauliflower, chicken for Adam, side salad

Friday - Dinner out

I did not make the chicken and veggie pot pie last week because I found lobster on sale for $6.99/lb, so I just couldn't pass it up. I will post the recipe and pictures of my lobster dinner later, I promise. Have a good week everyone!!!

Menu Planning - 11/2


Good morning everyone! I am back on track with my menu planning this week. Late last week was tough; we had a lot of candy in the house and we did not eat well. I am feeling it today too. I need to get back to my healthy meals and I know I will feel like myself in a day or two after that. I have a number of new recipes I plan to try out this week. I can't wait! A lot of them are seasonal, so it will be fun. Here is what I have for this week's menu:



Monday - Chicken, rice pilaf, salads



Wednesday - Veggie and Black bean Quesadillas


Thursday - Potato and Carrot Pancakes, Baked beans, pork sandwich for Adam

Menu Planning - I know I am late on this

I know, I know, it's Thursday and I am late on getting this out, but I did menu plan, I just didn't get it on my blog. Here is what we had.

Monday - Annie Chun's Pad Thai adding in carrots, onions, and egg, chicken for Adam
Tuesday - Wild Salmon (grilled), fresh green beans, and wild rice
Wednesday - Leftovers (salad instead of green beans)
Thursday - Eggplant parmesean (I am going to bake the eggplant though instead of frying it) egg pasta, and a salad
Friday - On our own, I am going to dinner with some girlfriends and I can't wait!!!
